Domaine Charly Nicolle
Domaine Charly Nicolle was created with less than one hectare in 1979 by Robert Nicolle and Josette Laroche, who can both trace their history from winemaking families in Fleys back to the late 19th century. Since the creation of the domaine, they have increased the size of their vineyards bit by bit, and currently the domaine produces wine from 20 hectares of vines. In 1999, they were joined by their 20 year old son Charly, who had just graduated from the lycée viticole.
Today, Charly is officially in charge of the domaine together with his wife Lucie, but Robert is still out in the vines nearly every day. The largest holdings of the domaine are in AOC Chablis, located for the most part around the village of Fleys. The vinification is on the lees in stainless steel tanks, which produces a house style that is both fresh and vibrant, but also rich on the mid-palate.

The hobby project of Charly Nicolle’s wife Lucie, this sparkling wine is made from 100% Pinot Noir from near the town of Tonnerre on the border of the Champagne region. We found it delightfully crisp and dry with fine beading and hints of apples and raspberries.

Grown in classic clay/limestone soils, with vine age of 15-20 years, we love this 'entry level' Chablis for its classic characteristics of white flowers, oyster and mineral. A perfect pairing with fresh seafood.
Jasper Morris: 'Grown at the top of the hill, on the plateau. A very juicy style with lots of fresh fruit. Crisp and chiselled with a faint pyrazine note at the end. But good weight, and classy.'

Fabulously layered, revealing delightful aromas of ripe lemon and orchard fruit. Refreshing yet concentrated on the palate, with a deep, lemon core enveloped by elegant mineral tones. The finish is harmonious and lengthy with an attractive, saline twist. Outstanding.
Jasper Morris MW notes: 'From the Côte Pré Girots sector only, vines from his uncle and grandfather which were probably planted in the 1950s. Pale lemon, more depth of fruit. This is quite a step up. Fine long finish with succulent white fruit.'
